Cranberry Caramel Bars
2½ cups cranberries
½ cup + 6 Tablespoons sugar
2 cups + 1/3 cup flour
2 cups rolled oats (either quick or regular)
½ cup light brown sugar, tightly packed
½ tsp baking soda
1 cup butter, melted
1 cup chopped toasted walnuts
1 cup caramel topping (1 jar-not low fat)
Combine cranberries and 6 tablespoons of sugar in a bowl and set aside.
Combine 2 cups flour, oats, ½ cup sugar, brown sugar, and soda.
Add melted butter and mix together.
Reserve 1 cup crumb mixture and set aside.
Press remainder of crumb mixture into a 9×13 inch pan, sprayed with Pam.
Bake 15 minutes.
Sprinkle cranberry mixture and walnuts on baked crust.
Mix caramel topping and remaining 1/3 cup flour together and spoon that mixture on top.
Sprinkle the rest of the crumb mix on top.
Bake 20 minutes until lightly browned.
Cool and cut bars.
